Creamy-Parmesan Baked Eggs

So I got the idea for this recipe from my Foodie, Blog, Facebook, Recipe Friend Lori!

recipe

•4 eggs
•1 tsp butter
•2 tbsp Parmesan cheese
•salt and pepper to taste

1.Preheat oven to 325 F degrees.
2.Butter 2 4″ ramekins. Crack 2 eggs in each ramekin.

3.Salt and pepper the eggs.

4.Grate some Parmesan cheese over the eggs.

5.Bake for about 10 to 15 mins.

(I added some veggies to my eggs, I added in diced onion and chopped shrooms and chopped tomatoes. So I chopped up about 1/4 cup of yellow onion

Also chopped up 9 mushrooms

Also dice 1 garlic clove

Preheated a small skillet to med heat and coated the bottom of the pan with olive oil

add onions to skillet

and garlic

saute for about 5 minutes and add mushrooms

add salt and pepper to taste and about 2 tbsp of butter

Cook for about 10-15 minutes or until mushrooms are done and onions are translucent. Set aside.

Also chop up a couple of tsp of flat leaf parsley.

Once eggs are done baking

add Mushrooms, onion, garlic mixture on top of eggs and sprinkle parsley on top

and eat

And have your husband eat

Texas Toast, Garlic, Cheese Bread

So get you some Texas Toast

Get you a baking sheet and line it with foil (for easy clean up).
Preheat your oven to 400 degrees.
Lay pieces of Bread on sheet pan, I did 5.

Then Get 5-6 Garlic cloves (My thinking, 1 garlic clove per slice of bread)

Dice the garlic cloves up. Also get some flat leaf parsley and chop up about 1/4 a cup.
Then get a small skillet and preheat burner to med heat. Add in about 4 tablespoons of better (half a stick) and a couple of tablespoons of olive oil and let the butter melt.
Once the butter melts add in the diced garlic
and let it cook until you smell the garlic

Once you smell the garlic, pull it off the heat and turn the burner off.
Then Take the butter, garlic, olive oil and spoon it onto the Texas toast. Spread garlic and butter out all over bread. Make sure there aren’t big clumps of garlic all stuck together. Make sure to spread it out on bread

Then take some grated parmesan cheese, about 1/2 a cup or more if you like a lot and sprinkle it on each piece of bread and
Then take the chopped parsley and sprinkle that over the cheese and bread

Bake in 400 degree oven for about 12-15 minutes or until bread has toasted some

and you are ready to eat this garlic, butter, cheese goodness!

Grilled Onions

So I LOVE onions, especially grilled ones! I put them in everything I make (pretty much) Sometimes when I want a snack I will have Normy grill me up some onions. I love them! So Here is a recipe for grilled onions. You could use these to eat by themselves, or put them on a burger, or a grilled potato salad, with other grilled veggies. Heck anything you can put onions in really.

So you take an onion and peel it and slice it into rounds, Try and keep them together. Sometimes I put toothpicks in them to help hold them together.

Then I brush on olive oil on both sides and then add seasoning salt, or garlic salt, and pepper

Turn grill on to med high to high heat, not too high or the onions will burn, grill them turning as need so they turn a nice color like so…

let them cool for a few and remove toothpicks if you have them in, and eat away, or chop them up to add them to whatever you want…
