Jalapeno Cheddar Potatoes with onions, Cilantro and Lime

Olive Oil 2 Tbsp to coat pan, and 2 more to coat potatoes or desired amount

1 lb. red potatoes, cut into 1 1/2 inch-pieces

1/2 onion chopped

2 Jalapenos, sliced

1/2 cup shredded Cheddar Cheese

1/4 cup cilantro, rough chop

1 lime

Freshly Ground Black Pepper, Garlic Salt to taste

Preheat Oven to 400 degrees.

Oil pan and fill with chopped red potatoes, and chopped onion, then drizzle a little more olive oil over the top of the potatoes, season with Garlic Salt, and Pepper

Bake for 15 minutes and then pull pan out and flip potatoes, put back in for 15 more minutes, then pull out flip potatoes.

Then add Jalapenos, cook for 5 more minutes

Sprinkle cheese over the top of potatoes, put back in oven and cook 5-10 minutes until cheese is melted.

Then pull out of oven and top with cilantro and squeeze lime juice over the top of potatoes pan will sizzle to let you know the goodness is ready for you to grub down on


Avocado and Tomato Salad


one large tomato, sliced

one avocado, sliced

1/4 red onion, sliced

one lemon

Drizzle of Olive Oil

Salt and Freshly cracked black Pepper

lay sliced tomatoes and avocado on two plates, even them out, then place desired amount of sliced onion over them. Squeeze half of lemon juice over each plate of tomatoes and avocados, then drizzle desired amount of olive oil, salt and Pepper.
