Mexican Rice

So last Friday May 6th Timmy and Katie asked us to come over to celebrate Timmy’s Birthday! His birthday is actually Cinco de Mayo, or May 5th, but it sounds so much better when you say Cinco de Mayo! So anyways as part of the Cinco de Mayo Holiday, Katie was cooking some Mexican food. Enchiladas!

So me being the cooking fool I am offered to make some Mexican rice and salsa. So I tried out a new Mexican rice recipe. They always say you shouldn’t try a new recipe for the 1st time when cooking for a crowd, Well I think that’s the PERFECT time to try a new recipe, that way everyone can try it and see if they like it! So this recipe was a new one and it turned out pretty good…

Recipe

3 tablespoons vegetable oil
1 cup uncooked long-grain rice
1 teaspoon garlic salt

1/2 teaspoon ground cumin
1/4 cup chopped onion
1/2 cup tomato sauce
2 cups chicken broth

Heat oil in a large saucepan over medium heat and add rice.

Cook, stirring constantly, until puffed and golden.

While rice is cooking, sprinkle with salt and cumin.

Stir in onions

and cook until tender. Stir in tomato sauce

and chicken broth;

bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
