Roasted Yukon Gold Potatoes with Onion and Green Bell Pepper

I made this recipe up. I LOVE potatoes. Think I have said that before. Love onions, love Bell Peppers.

Preheat oven to 400 degrees

Then Start with 5-6 med Yukon Gold potatoes and peel them and watch them a cut them in half and then into bit size pieces. Place into med sized bowl, then get one large, yellow onion and chop it up, then get a green bell pepper and chop that up. Place chopped onions and bell peppers in same bowl as potatoes and drizzle about 2 tablespoons over them, add Pepper and Salt to taste and stir up.

Pour potatoes, onion and bell pepper onto baking sheet and spread out into a single layer, then sprinkle seasoning salt over the top

to taste then place in oven and cook for 35-45 minutes, flip a few times, bake potatoes till they are tender when you poke them with a fork.

While the potatoes cooked I made a sour cream, mayo, dill dip to go with them…
I used 1/2 cup may-o, 1/2 cup sour cream, mix, add salt, pepper, and 1/2 tsp garlic salt, and 1/2 tsp of seasoning salt and about a tablespoon or maybe even more than that of fresh dill
stir that in
Taste, adjust seasoning if you need too, and sprinkle a little more dill on top

When potatoes are done, pull them out and let them cool for a few
then place some on your plate with a dollop, or more of the sour cream, mayo, dill dip…
Sorry I didn’t take a picture of that part, as I was embarrassed of the amount of dip I had on my plate!
