So this past weekend, we celebrated my old co-worker Nicole’s Birthday. Well Nicole is more than an old co-worker she is a friend! I mean she hired me at my last job and put up with me for three years. She probably deserves a medal or something! I annoy her in a lot of ways, but she really **does** love me! So Nicole invited us to enjoy some Street food from food trucks of Denver, Check it out:

Nicole and I have a lot in common…We both like to bake, we both got married on 8/8, we are both Mrs. R… oh and most important, we are both Goofy!
and we both LOVE cupcakes!
So last Friday, Normy and I went and (FINALLY) got us a Cosco card! Exciting stuff! Hey it was a BIG step in our marriage! So we got us some Salmon and made a yummy dinner! Most people like to go out to eat on Friday Nights. Not this chic. I’d rather cook…OK now onto cooking!
So get you a big piece of Salmon. Mine Was 1.46 lb and cost $11.52. Incase you were wondering!
Preheat your oven to 400 degrees, place Salmon in a cast iron skillet coated with Olive Oil (or on a sheet pan if you don’t have a cast iron skillet)
That is a mighty fine, looking piece of fish.
then drizzle some of this over the salmon, about a tablespoon or two, or use fresh squeezed lemon juice
Then season the salmon with some of this, to taste
Then get you some dill weed and season the salmon with this, to taste as well
Season the salmon with salt and pepper as well, Then get two lemons and slice them thin slices and remove the seeds and lay slices of lemon over salmon like so
I love lemon
Get you some butter and cut a couple of slivers off and put them under the lemons (I decided this last-minute)
see the butter under there? That’s LOVE.
Place the salmon in the oven and bake for 8-12 minutes depending on thickness.
Take out and slice you off a piece and serve hot
