So I got the idea for this recipe from my Foodie, Blog, Facebook, Recipe Friend Lori!
•1 tsp butter
•2 tbsp Parmesan cheese
•salt and pepper to taste
1.Preheat oven to 325 F degrees.
2.Butter 2 4″ ramekins. Crack 2 eggs in each ramekin.
3.Salt and pepper the eggs.
4.Grate some Parmesan cheese over the eggs.
5.Bake for about 10 to 15 mins.
(I added some veggies to my eggs, I added in diced onion and chopped shrooms and chopped tomatoes. So I chopped up about 1/4 cup of yellow onion
Also chopped up 9 mushrooms
Also dice 1 garlic clove
Preheated a small skillet to med heat and coated the bottom of the pan with olive oil
add onions to skillet
saute for about 5 minutes and add mushrooms
add salt and pepper to taste and about 2 tbsp of butter
Cook for about 10-15 minutes or until mushrooms are done and onions are translucent. Set aside.
Also chop up a couple of tsp of flat leaf parsley.
Once eggs are done baking
add Mushrooms, onion, garlic mixture on top of eggs and sprinkle parsley on top
And have your husband eat
