Roasted Potatoes with fresh Green Herbs

So I had some fresh herbs left over from this recipe. So I decided to roast some potatoes and then sprinkle the fresh herbs over them…

preheat oven to 350 degrees.

Then take 5-6 red potatoes and wash them and cut them in half, then cut the halves into halves and then cut into chunks. Then add chopped up potatoes to a medium-sized bowl and toss 3-4 tablespoons of olive oil and salt and pepper to taste. Add other seasonings if you would like, like garlic salt, or red pepper flakes.

Then get a baking sheet and pour potatoes onto sheet and spread out so they are all spread out well and none are stuck together so they all cook evenly. Place sheet pan in oven and bake for 30 minutes and then pull tray out of oven and flip potatoes and put back in and cook for another 15-20 minutes. or until the potatoes are fork tender. I even sometimes turn the heat up a little at the end to get them a little more crispy…

Then pull them out of the oven and take the juice of one lemon and squeeze that over the potatoes and then take the fresh herbs you had left over from the salmon recipe. Sprinkle the scallions, fresh dill and parsley over potatoes. Or just chop up about 1/4 cup of each and there you go!
