Eggs with Ham, Shrooms, Bell Pepper and Onion

One Morning I looked in my fridge and didn’t know what we could have for breakfast, But figured it out pretty quickly and went with this…

Found all these goodies:

So I went with eggs with Ham, Shrooms, Bell Pepper and Onion…

So Take a Medium bowl

Crack an egg on the side of that bowl, heck a couple

Crack a total of 6 eggs

Then whisk those eggs…what is funny is I HATE using a whisk to whisk eggs I prefer a fork…So is that still called whisking?

Then set the eggs aside

then take half a green Pepper
DSC_0026-1

and chop it up
DSC_0029-1

Then take half of an onion and cut the half, in half (if that makes any sense).

chop that up as well

Then take 8 shrooms and wash them, and chop them up as well

all the veggies are all chopped up

Then take the ham, which is one slice of thick ham and chop that up as well

Veggies and ham are all chopped up now

and you are ready to start cooking

So get your cast iron skillet and pour in enouigh olive oil to coat the pan, and turn the burner to med high heat

Then throw in the onion, bell pepper and mushrooms

add salt and pepper to taste

cook veggies for about 7-10 minutes until the onions are translucent. Then add the ham

cook the ham for about 5 minutes then add the eggs

Turn the heat down to med low heat, as I like to cook my eggs low and slow

cook the eggs for about 7 minutes or until they are scambled

and serve

I served yogurt with fresh raspberries on the side as well, with mine.
