Cauliflower Mashed Potatoes

Take one head of Cauliflower and wash and cut it up and place into a bowl and set aside. Then get a big pot of salted water and bring it to a boil, and once it boils add the cauliflower…

Boil for 15-20 minutes or until Cauliflower is fork tender or even mushy

Then get 3 potatoes, I did 3 because that’s all I had…

So peel them and wash them

then chop them up and place them in a pot

with water and bring to a boil

Boil potatoes for about 15-20 minutes as well, or until they are fork tender…

Then drain and then place them into a food processor

Turn on the food Processor and blend potatoes
then add in the cauliflower, But don’t over fill, You will have to do this in two batches

Add in a little salt and pepper, and garlic salt and about 1/4 cup of sour cream..

Then blend

While blending add in Chicken broth to help thin potatoes and cauliflower a little, (I didn’t measure, I just eye ball it) but not too much you don’t want soup, you still want a mashed potato consistency. Usually I add in cream, or milk, but I wanted to make it a little healthier so I did chicken broth…Plus Normy is Lactose Intolerant…

Once Potatoes are all blended add them to a bowl,

You could add a little bacon to yours, like I did…
