Buttermilk-Blueberry Breakfast Cake

I have been eying this recipe on Pinterest and finally I decided to make it! My co worker Melissa loves Blue Berries so she was the reason I made this cake! Better my co workers eat the cake then me eating it all myself!

Recipe

½ cup unsalted butter, room temperature
2 tsp. lemon zest or more — zest from 1 large lemon

7/8 cup* + 1 tablespoon sugar**

1 egg, room temperature
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. kosher salt
2 cups fresh blueberries
½ cup buttermilk

* 7/8 cup = 3/4 cup + 2 tablespoons
** This 1 tablespoon is for sprinkling on top

1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy.

2. Add the egg and vanilla

and beat until combined.

Meanwhile, toss the blueberries with ¼ cup of flour,

then whisk together the remaining flour,

and salt.

3. Add the flour mixture to the batter a little at a time,

alternating with the buttermilk. Fold in the blueberries.

4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan.

Sprinkle batter with remaining tablespoon of sugar.

Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.

Chipotle Dressing

Oh Monday, Oh how I don’t like thee! Monday’s are always SO tough after you’ve had an awesome weekend! But what can you do? Just get through Monday and get it over with!

So for Mother’s day, I wanted to make my mom something good and healthy. So I came up with Taco Salads.

So when I found this recipe I searched: taco salad dressing and found this: Chipotle Dressing 

Not healthy for mom, so I made her homemade salsa, but I made the  Chipotle Dressing for Normy and me as it had a Kick, HI YA!

What you will need:

1/3 cup chopped fresh cilantro

1 T minced chipotle chile, canned in adobo sauce

1 t ground cumin

4 t fresh lime juice

Mix, stirring well.

Tip: Add a spoonful of adobo sauce for a spicier salad.

Classic Strawberry Shortcake

Last week, Normy and I had wanted to have his mom and step dad over for dinner. They hadn’t seen our new apt so we wanted them to see our new place and thought that I would make them a Jamie meal as well, cause you know there is nothing better than a Jamie meal! So I made them:

I have always wanted to make this dish for my in-laws as they are easy to cook for because they are like me and aren’t too picky about what they eat, as long as its good…

Recipe

2 (16-oz.) containers fresh strawberries, quartered
3/4 cup sugar, divided
1/4 teaspoon almond extract (optional)

1 cup whipping cream
2 tablespoons sugar
2 3/4 cups all-purpose flour
4 teaspoons baking powder
3/4 cup cold butter, cut up
2 large eggs,

lightly beaten
1 (8-oz.) container sour cream
1 teaspoon vanilla extract

1. Combine strawberries,

and, if desired, almond extract.

Cover berry mixture, and let stand 2 hours.

2. Beat whipping cream at medium speed with an electric mixer until foamy; gradually add 2 Tbsp. sugar, beating until soft peaks form. Cover and chill up to 2 hours.

3. Combine flour,

remaining 1/4 cup sugar,

and baking powder

in a large bowl; cut butter into flour mixture with a pastry blender or two forks until crumbly.

4. Whisk together eggs, sour cream, and vanilla until blended; add to flour mixture, stirring just until dry ingredients are moistened. Drop dough by lightly greased 1/3 cupfuls onto a lightly greased baking sheet. (Coat cup with vegetable cooking spray after each drop.)

5. Bake at 450° for 12 to 15 minutes or until golden.

6. Split shortcakes in half horizontally. Spoon about 1/2 cup berry mixture onto each shortcake bottom; top each with a rounded Tbsp. chilled whipped cream, and cover with tops. Serve with remaining whipped cream. Garnish, if desired.

Beef Tips in Mushroom Sauce

Recipe

2 pounds lean chuck – cut in 1 – 3/4 inch pieces
1 can 98% fat-free cream of mushroom soup (I added 2)
1 pkg. onion soup mix
1 can Diet Sprite or 7up (I forgot that the recipe called for DIET, so I got regular by mistake)

Put meat in crock pot.

Pour soup

& onion soup mix over meat.

Add Diet Sprite/7up.

Cook in crock pot all day on low (or high for at least 4 hours). Turn off and let sit for 30 minutes before serving.DSC_0214-1

Citrus Roast Chicken with Chimichurri

The nice thing about working so close to home is that on my lunch if I need to prep something for dinner I can…It’s good and bad. Good for dinner time, bad if I wanna relax on my lunch. HA! Me? Relax? What is that word? If I need to marinate some meat for a couple of hours, just pop home for lunch make the marinate and let it sit in there till we eat.  I take a late lunch, I go at 2, and I get an hour so when I get back its 3 and then I only have 2 hours of work left…I like eating late, going to lunch late, eating dinner late, going to bed late, late to work, I am just always late! Jamie McLate!

Recipe

1 1/2 teaspoon mild chili powder
1 1/2 teaspoon paprika
1 teaspoon ground cumin

juice of 1/2 orange

1 teaspoon orange zest

juice of 2 limes or 1/2 lemon
1 teaspoon lime or lemon zest

3-5 minced garlic cloves

1/2 bunch cilantro, finely minced

2-3 tablespoons olive oil
2 teaspoons salt
1 large roasting chicken

Preheat the oven at 325 degrees.

Mix ingredients except for the chicken and set aside.

Rinse and clean chicken thoroughly; pat dry. Carefully separate the skin from the muscle all over the bird to allow room for the rub to absorb into the bird.

Liberally coat the chicken under its skin all over breasts and thighs with the rub and also coat the inside cavity.

Transfer the coated chicken into a roasting pan, resting on the roasting rack.

Roast chicken uncovered in the preheated oven for 55-60 minutes, depending on how large your bird is. Roast until the internal temperature of the bird is 165 degrees and juices run clear.

Remove bird from the oven and cover with foil, allowing it to rest for at least 10-15 minutes. Meanwhile, prepare the chimichurri sauce below, which is served along side of the chicken as a condiment.

Chimichurri

1/4 cup coarsely chopped parsley (I did 1/4 cup Parsley and 1/4 cup Cilantro)
3 tablespoons red wine vinegar
4 large garlic cloves, minced (2 1/2 tablespoons)
2 tablespoons oregano leaves
2 teaspoons crushed red pepper
Kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil

In a food processor, combine the parsley,

garlic,

oregano

and crushed red pepper.

Process until smooth; season with salt and pepper. Transfer the sauce to a bowl and pour the olive oil over the mixture. Let stand for at least 20 minutes.

Serve with grilled steaks and/or chicken and garnish with fresh chopped tomatoes if desired.

Another banana bread recipe

What I made one year ago on this day: Barbecue chicken legs

Thousand Island Dressing

 

Recipe

So you will like this recipe as you don’t need a mixer,  just do it by hand in a bowl….

3 to 4 ripe bananas, smashed
1/3 cup melted salted butter

3/4 to 1 cup light brown sugar (depending on the level of sweetness you prefer, I always use the smaller amount)
1 egg, beaten

1 teaspoon vanilla
1 tablespoon bourbon (optional)
1 teaspoon baking soda
Pinch of salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Pinch of ground cloves
1 1/2 cup of flour

Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas

in a large mixing bowl.

Mix in the sugar,

egg, vanilla

and bourbon, then the spices.

Sprinkle the baking soda

and salt over the mixture and mix in. Add the flour last,

Pour mixture into a buttered 4×8 inch loaf pan.

Bake for 50 minutes to one hour, or until a tester comes out clean. Cool on a rack. Remove from pan and slice to serve.

Bell peppers casserole

So the other night for dinner I was going to make stuffed bell peppers, but being Jamie and wanting to do always do something different I came up with this recipe instead…It’s a Jamie concoction…

Here is what you will need:

Seasoning Salt
Pepper
Salt Pepper
Diced Fire Roasted Tomatoes
Parmesan Cheese
4 bell peppers any color of your choice
1 yellow onion
Uncle Ben’s Wild Rice
1 pound, ground turkey

Preheat oven to 400 Degrees

So first things first, cook the wild rice as stated on the box.

then grab your ground turkey, seasoning salt, salt and pepper

You will need a pound of turkey

Chop a yellow onion up

Throw the Ground turkey in a medium-sized pan, on medium Heat

sprinkle the Seasoning Salt, Salt and Pepper over the turkey to taste

Grind the meat up

So while your helpful hubby grinds the meat up, go ahead and prep the other ingredients.

take a bell pepper and wash the outside and then chop the top off

Save the top and cut around the stem

do this with the rest of the bell peppers

then clean the seeds out of the bell pepper and then chop up the tops of the pepper and the rest of the pepper

I had half a green Bell pepper, so I went ahead and threw that in too

So once the meat has been browned a little, go ahead and add in the chopped onion

Stir and cook for about 5-7 minutes

then add in the rice you started earlier

stir in with meat, make sure its nice and mixed together

Then pour into a baking dish

then take the peppers you chopped up before and add those

then add in the canned tomatoes and salt and pepper, to taste

mix together and then place in preheated oven

I had Parmesan cheese in the beginning picture but I added Colby jack instead.
Bake the meat and rice for 30 minutes at 350, then add the cheese and bake another 10 minutes or until the cheese is melted

you can add the Parmesan if you want, Colby jack just sounded better to me…

Once the cheese is melted, pull out of the oven and let cool for a few minutes before serving
