Stuffed Bell Peppers

Take a dutch oven or a big pot and coat the bottom with Olive oil and then turn the burner on to medium high heat

grab 6 bell peppers any color…

Make about 3 cups of your favorite rice….white, brown, wild rice.

I made Uncle Ben’s wild rice

to the oil you added to the pan add in one chopped yellow onion

Saute for about 5-7 minutes, stirring occasionally

Then add in ground beef

ground meat up

and cook until meat is cooked through

Cut the tops of the bell peppers and take the seeds and guts out

cut around the stems of the tops you cut off

Then chop those pieces up into small chunks

add the chopped peppers to the ground beef
as well as the rice

and stir everything together

Preheat oven to 350 degrees and get a baking dish

Grab a pepper and fill it with the beef and rice mixture

Place in baking dish

then sprinkle some Cajun seasoning on top of each pepper

Then grab a 14.5 can of fire roasted tomato chunks

and take a spoonful of the tomato chunks and pour on top of each pepper

Then place in the oven that you preheated earlier and cook for 30 minutes, uncovered

while the peppers are baking grate a cup of extra sharp cheddar cheese

once the peppers have baked for 30 minutes pull them out and grab a handful of the grated cheese and place a heaping pile on top of each pepper

and watch your hubby drool

bake peppers for another 10 minutes until cheese is bbling and melted

once the cheese is melted pull the peppers out of the oven and let them cool for about 10 minutes and serve
