The inspiration for this recipe came from here
Of course I had to make it my own so I made a few changes to make it Jamie Style!
1 pound of bacon, chopped
2 zucchini, chopped
2 yellow squash, chopped
3 ears of corn with the corn kernels cut off
1 onion, chopped
1 pound white mushrooms, sliced
Not shown in picture, but Cajun Seasoning
1.Place bacon in a large, deep skillet.
Cook over medium-high heat until bacon is almost browned. Drain bacon, and add back to skillet, and add the chopped onions
cook until translucent 7-10 minutes
Then add the shrooms
cook until shrooms are nice and browned on the edges, about 10-12 minutes
Then add in the corn
cook for a few minutes then add in the zucchini
then I sprinkled a little Cajun seasoning over the zucchini, to taste, because I love it!
and then add in the yellow squash and season with Cajun seasoning to taste as well
and cook the zucchini and squash and are tender but still crisp, about 10 minutes.
