1/4 cup olive oil
1 yellow onion, sliced
3-4 stalks celery, small dice
4 cloves garlic, minced
1 green bell pepper, chopped
1/2 cup flat-leaf parsley, chopped
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
4 Mahi Mahi fillets, cut into 1-inch pieces.
