Apricot-Glazed Chicken

Got the recipe from here

3 tablespoons apricot preserves

2 tablespoons red wine vinegar

1 1/2 tablespoons extra-virgin olive oil

1 garlic clove, minced

5 bone-in chicken thighs
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Preheat oven to 425 degrees

Combine first 4 ingredients in a small bowl, stirring well.

Let chicken stand at room temperature for 30 minutes. Sprinkle chicken evenly with salt and pepper.

Place chicken in cast iron skillet and place in oven

bake for 5 minutes

then turn the chicken over and brush with apricot mixture

bake for 10 minutes

then turn the chicken over and brush with the apricot mixture and bake for 10 more minutes

Flip chicken again, and brush with mixture, bake for 10 minutes. Then flip it back over and brush with the mixture, and then bake for 10 minutes,I kept doing this until the chicken was done, until it reached an internal temp of 165.

Then what I did was turn the chicken again and brushed with the apricot mixture and then broiled the chicken for 5 minutes, then flipped it again and brushed more of the mixture on the chicken and broiled it for 5-7 minutes or until its nice and crisp and has a nice color

Then I pulled it out of the oven and let it rest for about 7 minutes

serve up nice and hot!
