Potato Macaroni Salad

Got the recipe from here

5 large russet potatoes, peeled

1 – 1/2 cups small elbow macaroni (follow directions on box on how to cook)
1 Large carrot, finely shredded/grated (soak in water and squeeze out excess juice)
1 tablespoon finely minced onion (I add extra, as I LOVE onion)
6 hard boiled eggs, finely chopped

Salt and pepper to taste
1 1/2 Cups Best Foods mayonnaise (you may need to add more)

(I highly recommend making this salad the day before, as it sits and chill the better it tastes)

boil the potatoes the night before, drain them thoroughly, and then chill in the refrigerator overnight.

The next day, cut the potatoes into bite size cubes

Cook the macaroni by following package directions, once they are cooked, rinse them with cold water until they are nice and cool. Drain completely. The Macaroni needs to be cooled completely before adding to the salad.

Once you have cubed the potatoes and the macaroni is nice and cool.

Add the rest of the ingredients

Mix everything together, really well

Taste salad after you mix everything together. I felt mine was little dry so I added mayonnaise, and added a little more salt & pepper.

This salad is so yummy! I LOVE IT!

Serve with HAWAIIAN HULI HULI CHICKEN

Gotta love Paula Deen! But there is no butter in this recipe!

OK here we go! Let’s get to the recipe!

about 2 pounds of thin sliced breast fillets

Lemon-Pepper Seasoning, to taste
2 celery stalks, diced
4 hard-boiled eggs, chopped
1/2 red onion, diced
Lemon Pepper seasoning, to taste
Creole Seasoning, to taste
Salt and pepper
1/2 cup mayonnaise
1 tsp of grainy mustard

1 loaf of bread (I used sourdough)

1 purple onion, sliced
1 red tomato, sliced
1 avocado, sliced

First what I did was preheat my oven to 400 degrees and got a large cast iron skillet and placed the breast fillets in the cast iron and then seasoned them with lemon pepper seasoning to taste, both sides.

Then once the oven was pre-heated I place the chicken in the oven and cooked for 10 minutes, then flipped them and cooked them 10 more minutes.

while the chicken is cooking get a medium-sized stock pot, boil your eggs

Then pull the chicken out of the oven and let it cool for a few minutes

and then cut the chicken into strips

and then cut into cubes

Dice the chicken, and add to a large bowl

combine with the diced celery,

I added in lemon pepper seasoning and creole seasoning

Then the mayo

then I added in about a tsp of grainy mustard

and mix everything together really well.

test for seasonings and adjust as needed or it might taste perfect as is

Place salad in fridge until ready to use.
Then slice the bread, onions, and tomatoes.

So how I served my sandwich was I sliced the bread and then took a slice of bread and add  some regular mustard

then I added sliced cheddar cheese and then the chicken salad, and then topped with some red onion and avocado (I skipped the tomatoes)

Chef Salad al la Jamie

Got the idea for this recipe from the web, but then I went and made it my own. So I guess I made it up!

So you will need Turkey Breast, chopped
Romaine Lettuce, washed and Chopped
2 carrots, peeled and chopped
4 hard-boiled eggs, cut in half
one large tomato, chopped
Ham, Chopped
English cucumber, sliced and quartered
Radishes sliced

So start by washing the romaine leaves

then dry it, and chop it up

then wash and cut the ends of the radishes off and then slice thinly

Then add the chopped carrot

Potato Salad, & Dinner at Mom’s

So last Sunday my mom invited Normy and I over for dinner! YAY! My Brother was going to smoke some ribs with my dad’s smoker and my mom was going to make her cucumber, tomato salad (that I LOVE).  So I offered to make potato salad and then cupcakes for dessert…I ALWAYS offer to bring more than I should, But that is how I roll…

So for my potato salad I got a 5 pound bag of red potatoes. My brother is 6′ 5″ and he eats a lot. So I had to make a lot of salad for him.

Throw the potatoes in a big pot

and fill it with water, (make sure the pot is big enough so that all the potatoes fit and are submerged in the water).

Then place the pot on a burner and turn up to medium high heat

I added a little salt to the water as well.

I boiled the potatoes for about 30 minutes and I poked them with a fork and the bigger ones weren’t quite fork tender, so I boiled them for another 15 minutes…

Then while the potatoes were boiling I got the eggs boiling too.  I got a medium-sized pot and filled it with water and very gently placed 8 eggs in the pot and brought it to a boil and boiled for 25 minutes

Once the eggs are done, I drain them and then place them in a boil and fill it with cold water and place in the fridge. I have done this a few times and it seems to help when peeling them. The shells come off easier. So I leave them in the fridge for about an hour or so.

Once the potatoes are done, drain them and let them dry for a few and chop them up when you are able to handle them. Chop them into bite size pieces and plop them into a big bowl.

You could peel the skin off or leave it on the potatoes, I left it on. Chop all potatoes up.

Then you can start adding the veggies. dice up 2 stalks of celery

Then peel and dice up two carrots

Then dice up one large red/purple onion

Then peel the 8 eggs that you put in the fridge earlier

Chop those up and add them to the big bowl as well

Then add in salt and Pepper

then get another medium-sized bowl and to that you are going to add in Miracle Whip, about 2 cups. (My mom makes her potato salad with miracle whip and I do too, tastes better to me)

then add it about 2 tbsp of grainy mustard

Then add in some yellow mustard

I just went with it and did this all on taste

Then get a ranch packet and add that to the bowl as well

Mix everything together

Then add to the potatoes and veggies in the big bowl

once everything is well incorporated, sprinkle a generous amount of paprika over the top

Then the next day pack it up and bring it to mom’s house…

It has:
smoked BACON
Onions
red bell pepper
mushrooms
garlic
Worcestershire sauce
splash of balsamic vinegar
pepper
He knows his sis toooo well! (I had three helpings of this) I will be making this in the near future with steak!

Then mom was making her cucumber salad. She makes hers like her mom and I LOVE the way my mom makes it:

Fill a bowl with white vinegar and a little sugar, and peeled and sliced cucumbers

My version of Cobb Salad

Saw this recipe and I decided I wanted to make something like it…

I believe that Cobb salad has to have bacon,  and blue cheese. I’m just guessing. But all the recipes I’ve looked at have those two things and I didn’t add them. So then would it be just a salad and not a Cobb salad then? Oh and I also added mushrooms, and onion  too…
1 head of romaine
1/2 head of iceberg lettuce
2 ripe avocados, seed removed, peeled, and cut into 1/2-inch pieces
1 whole Rotisserie chicken, skin removed and broken and cut up into bite size pieces
1 tomato, seeded and chopped fine
1/2 red onion, chopped
2 hard-boiled large eggs, separated, the yolk finely chopped and the white finely chopped
Salt and pepper

In a large salad bowl, toss together the 2 various lettuces

Compose the salad. Arrange the chicken, the tomato, and the avocado, eggs and mushrooms, Onion decoratively over the greens. (I added chicken last, after I took the pictures, as the salads looked so pretty, that I didn’t have room for the chicken and I didn’t want to make the picture look ugly so I just added it after I took the pictures. And Normy made his yummy dressing for our salad. I think a thousand Island, or Ranch dressing would have gone better with this not a vinaigrette).
